I know the 8800 GT is a single-slot solution, but I was wondering if it was that much longer than the 8800 GTS. Also, how much louder is the fan? I also heard that Crysis might actually play better on the 8800 GT due to the 640MB memory vs. the 512MB on the 8800 GT.

The GT is shorter than a GTX. Not sure about the GTS. And it's much lighter since it doesn't have the giant coolers like the GTX/S. The fan is annoying at 60% speed and up. Mines locked at 50% and my temps are fine.

I just saw a review comparing the 8800 GTS with the 8800 GT. The length looks to be about the same. The only difference I can see is the larger fan and dual slot requirement with the GTS.

It's very close if not the same.

Any game that you can push to be using more than 512mb of vram will be running like arse on the GTS 640 anyways. Few enough games really put the GTS 320 to its' limits. The 8800GT is between the GTS640 and GTX in performance, though overclocked it can doubtless be closer to the GTX (as the evga SSC review shows). In crysis with my GT SC I get 40fps avrg. @ 1280x1024 w/ everything high.
