How can I get windows explorer to open "computer" instead of all my junk default folders?

Why not simply create (drag) a shortcut from "Computer" folder to the desktop, and using that to start Explorer? Move it to QuickLaunch toolbar as well.

If you right click on 'Computer' in your Start menu there is an option to 'Show on Desktop'. I just hit [windows]+[E] on the keyboard though.

If you right-click and go to personalization there is a link in the top left that says "change desktop icons" you can add it there as well as add/remove Control Panel, Recycle Bin, Network and Personal Folder.
