Can anyone out there suggest a good motherboard that would be suitable to use with a Quadro FX 2000?

any motherboard will work...
however if you look a good motherboard for Professional use..

for your hardware purchase. a dual Pentium4 3ghz(xeon) motherboard looks and excelent choice . but right now it looks more interesting
the new ATLON processors (OPTERONS) they are 64bits.. and can
handle lots of memory.

many people there already have SUperfast
WOrkstations for Professional use. my main advice is to get the
1)FAStest Cpus possible from AMD or INtel
, because no matter how fast they are ,
they still are too slow for 3d animations , (thats why in 3d animation
movies ,they usually have Thousands of computers doing the work).
2)a motherboard with support for TONS of memory.. 2-3Gb at least !!
thats why i find more interesting the AMD opteron motherboards ,they support FAr more memory than that , but i think you need a special version of Windows XP to use the CPus in 64bits mode. TYAN usually have the best DUal motherboards in the market,but you can try with MSI and ASUS .

I love tyan boards, they are very stable, i dont however, like their RMA polocy, they are not friendly.
If you choose to go the intel route i MUST recomend the Iwill DP533 the review can be found here. (http://www.2cpu.com/Hardware/previews/iwill_dp533/) The intel route will be very stable and pritty cool.
If you feel friskey you could go the AMD route, with the Opertron! Kind of early to tell how stable and how good it will be, but you can do it, it would be 'neat'.

If memorty serves me correctly, the Nforce3 chipset will include some optimizations for quadrofx cards
Why not get a Quadro FX 3000, probably be much better and not to much more on the cash side.
