ATI evidently hopes to secure the market before Nvidia launches its GeForce 5700LE chip in March. The GeForce 5700LE chip is set to replace the 5600XT, which has enjoyed strong sales by offering a more competitive price than ATI’s 9600SE, sources commented.

Is NV31 production being stopped in favour of NV36, and Nvidia getting rid of all their stock of NV31 chips?

In light of new information, I suggest everyone not to trust any of the NV36 info we had so far. A lot of it is very wrong, and that means the rest most likely is. First of all, the NV36 will be manufactured at IBM's 0.13µ process. Secondly, the NV36 will not fully replace the NV31 ( at least, not the flipchip version ).

So, no, the NV36 was never meant to fully replace the NV31 in the short-term. NV31 production runs have probably been run after the launch of the NV36, although obviously not as many as before. I'd assume the 5700LE means the dead of the 5600XT though, and thus the end of NV31, one of the most buggy chips of our times.
