I realize some games use different shader/vertex versions depending on its Direct X version. In rivatuner you can force these options. What does this do in relation to games that are built on older versions? Will it improve image quality or performance?

In my understanding all it'll do is run them with that profile enabled. Also, I believe that forcing to a higher profile does nothing at all. Forcing to a lower profile... does just that. Disables higher effects (or emulates 'em) and runs under a lower profile. At least, that's my understanding of it.
