One step further, for what kind of system: AMD or Intel?

AMD = Lower Latency more important factor

Intel = Bandwidth is more important

but is it possible to buy DDR500 or more instead of DDR400 for AMD motherboards?

Sure, but it will default to DDR 400. And there's no guarantee if you overclock that you will reach the advertised speeds.
