I know that GeForce cards can only do single screen output when run in SLI mode, but cannot really find an answer for the Quadro. From Nvidia's site

"SLI Multi View: Combines the power of two NVIDIA Quadro PCI Express graphics cards to span a single hardware-accelerated OpenGL application window across multiple displays, run a single application per GPU with multiple display outputs, or enable other flexible usage of two PCI Express graphics cards."

It kind of sounds like Quadros can do multi monitor. If that's true, can they do more than 2 (triple or quad head spans like Matrox Parhelia or QID)?

Quadros also drive a single display when in SLI mode. All nView and multi-display verbage is referring to non-SLI operation.
