I understand that 2 cards in SLI don't equal 'double the performance' of 2 individual cards, but how does memory fit in? If I have 2 320mb cards, is that like having 640 available to my apps?

Here's how it works. The cards cannot share memory due to the massive bandwidth that would be required between the 2 cards. Instead they each have their own dedicated memory. Everything that is in the memory of one is also in the memory of the other. So with 2 320MB cards, you will only be able to use 320MB.

You can think of it like "RAID 1 on video cards" in an abstract sense, although that might be more confusing than einstein's explanation. :D
