I had just enough time before leaving work to try this with viewperf in SFR SLI mode and straight away the load balancing (according to the SLI HUD) started working properly!
Still, didn't have enough time to see if it actually made a real difference to performance although I would be surprised if it didn't.
What about AFR? Does this SLI mode also fall over when not in full-screen mode?
The following performance readings from viewperf (taken today before using the fullscreen mode short-cut key to fix load balancing) would suggest this:
Benchmarked with NV Driver 1.0-8774 and 8X FSAA (4 sub, 2 super).

As you can see theres virtually no difference between netween the scores here. I would of expected this with SFR due to the full-screen issue but is AFR also effected by this?
Also, i'm still slightly confused that my test app that calls the glutFullSreen function (no menu is visible after this function call and GL window fills exactly the desktop resolution) still makes SLI load balancing fall over. Whats glut not doing that the x-windows keyboard short-cut is?
