OK,

I've promised to come back and tell about my findings with my setup at home over the weekend.
This is an elderly i870P MB with P4 2.8E and FX6600GT.
On both component out (YPbPr) and DVI it is possible to select a 1920x1200 resolution but I don't have a HDTV to test with.

I would guess if the driver does not show a resolution of 1920x1080 or 1920x1200 the device is not capable of handling such a high resolution.
If I override the probed resolutions the monitor and TV lose sync and I have to kill the X-server to get back into normal mode of operation. But nothing else bad happens. I guess the monitor manufacturers simply say this mode could damage the device to cover their a** in case something goes wrong. YMMV.
