That'd need a card with more than two video outputs, which are difficult to find on the consumer market.
You could also use something like the Matrox TripleHead2Go to splice a video signal onto three monitors (or rather use a DualHead2Go for two monitors and the second port for the third, to avoid bandwidth problems)
I don't know how those things work on linux though, I'd guess you'll need some manual configuration to output the correct video resolution.
Also be aware that you'll need to manually override the Xinerama boundaries.
