Aside from using quite a bit more high resolution textures then your average current gen game, the majority of what you see is due to an extremely talented map designer. Those pictures don't show any unusual amount of increase polygon detail, most of the increased details we see are due to better and/or higher resolution Parallax mapping.
this reminds me what 3dfx's chief scientist Gary Tarolli (Mr T Buffer) said once in a forum. it's not about the amount of polygons in a scene, but what you do with those pixels that make it more realistic. I complained many games filled the scene with too many crates.
