I currently have a 5870 and the GTX 480s, and I can tell you that the fans are around the same noise level when both are set at 100%. The difference is that I can just leave the 5870 fans on auto and the temps will stay down while the fan remains fairly quiet in most gameplay sessions. While I have to set the GTX 480 fans to at least 80% to be comfortable with the temps (and at that speed its about as loud as my GTX 280s were on 100%).

The other difference is that I have the machine with the 5870 on the ground near my TV in a case with only one outtake fan, while I have the GTX 480s in my Antec 900 sitting on a cabinet next to my desk with 5 case fans on high, so of course the GTX 480s are gonna be much louder to me.

The GTX 480 temp and noise levels are not out of line with the previous generation of NVIDIA. The issue is that the competition is so exceptional in this category that it makes the NVIDIA cards look much worse this generation in that regard.
