With Android, updates are done OTA, so doing it in reasonably sized batches keeps cellular networks from getting overloaded. When the 2.1 update for the Droid Eris came online, it took a few days for it to reach my phone.
I don't know about verizon but sprint typically provides update software on their website the day of release. I personally update via xda.
