I'd bet on a single socket 8 core chip since Intel does it with the current xeons (3690 maps to 5690, for example). Also, I'm sure that a motherboard maker knows there's demand for some hot 8-core Sandy Bridge EP action with SLI/XFire capabilities, so we'll see that too.
