Plenty of good titles out already as well as inFamous 2 which just launched and the Demon's Souls sequel, Dark Souls, later this year, and Uncharted 3 later this year. Some of favorite games already out for PS3 include:

Metal Gear Solid 4
God of War 1, 2, and 3 (1 and 2 are on PS2 but were re-released for PS3)
Demon's Souls
inFamous
Uncharted 1 and 2
3D Dot Game Heroes
Gran Turismo 5

Others really like Killzone 2 and the Resistance series, but I am not a huge fan of those games.
