Seath's pretty easy when you figure his pattern out. He only breathes at the distance you're standing when he starts his animation (he kinda swirls his head around) so stay away from him, once he starts breathing dash in close and get a few hits in, then run back out to avoid the close breath. Shouldn't take too long.
