Okay, I have my system working as I wanted, thanks to Savek's post on page 5. I'm so grateful that I thought I'd register and post my xorg.conf in this thread in case it helps anyone else.

Note: I'm using the 'multiple separate screens combined with xinerama' approach, as TwinView apparently still can't do this in any sane way that I could figure out.

My set-up:
I have three flat-screens - a 20" 1600x1200 ViewSonic in the centre, and two 19" 1280x1024 Sharps, one on each side. I have a PCI-E nVidia GeForce 6600 running the centre and left screens (centre on DVI, left on VGA), and a PCI nVidia GeForce4 MX40000 running the right screen.

Everything seems to be working the way I'd expect with this configuration - gdm is now loading on the centre screen, without me having changed any of its default settings.
