You did not make the changes I suggested:
(**) NVIDIA(0): Unknown TVOutFormat value. Known values are"AUTOSELECT", (**) NVIDIA(0): "COMPOSITE", "SVIDEO", "COMPONENT", "SCART" However, I suspect that the behavior you're reporting is expected, as all TV-out modes are hardcoded with the expectation that TV's do not require a very specific mode. If you require better picture quality on your projector, you should use VGA or DVI inputs. Thanks, Lonni |

Try changing TVOutFormat from S-Video to SVideo.

As netllama said, try changing TVOutFormat from S-VIDEO to COMPOSITE in your xorg.conf
