I've read a few posts stating that 16/9 resolution via tv-out isn't possible, but I am able to run 1280x720, 960x540 and so forth in Windows, so is there any way do the same in Linux?

The only supported TV-out modes are those documented in the driver README.

I skimmed that page while browsing the readme, but I couldn't find the resolutions you mentioned.

The resolutions are restricted to those in the driver. You can view them by starting X with the following command and then inspecting your X log:
