Default Monitoring GPU

There is any utility (from nvidia or from linux) like "top", to see GPU usage?

There's something like that for nvidia's perfkit drivers. It are developer drivers which you can get from developer.nvidia.com. The tool which you can then use for such stuff is http://news.developer.nvidia.com/200..._perfgrap.html
