So I had someone install the OS for me and they registered it to "Gaming Rig". I changed the value to my first name in regedit, but when I right-click Start, click Explore, and look at the Documents and Settings folder, it says All Users (of course) but under it still says Gaming Rig. I even changed the windows username to my first name but it still hasn't changed. I also can't sync the time, and therefore can't download any Windows Updates.

under Documents and Settings it will always stay what it was inputed during install. you can't change that.
if you really want to get rid of Gaming Rig, then you have to create a new username, transfer documents or what ever else you got there.
and delete "gaming rig"
