Tried the new BIOS and it didn't change anything. I did notice however that the machine was not hard-locking when loading the driver. It just garbled the display so it looked like it did (I was able to ssh in and see that for some reason the nvidia driver simply wasn't getting the interrupts, and the 10000 limit would occur before Linux would disable the IRQ).

However, I did try enabling local APIC and IO-APIC support for Uniprocessors, and the problem has disappeared! This also solved the issue of every device appearing on IRQ5.

Now I have the following set in my working configuration:

Now I'm running without irqpoll and it's working great.
