You can always slap server 2k8 on it for now and play around with it and upgrade when the new OS comes out.

I am assuming you have an MSDN subscription? If so, just go the multi-boot route

you can download server 2008 and run it in "trial" mode, everytime time runs out run rearm and you will have more trial time

hmmm I guess its comes down to playing around with different OS for couple of weeks to find one that runs fine ...!
