The Asus Sabretooth mobo would be an excellent alternative to the Gigabyte. I'm currently using one in my gaming rig.

Eeek!

Spanner in the works.

Ok, I will be gaming at 1980x1080.

Would I be better off just going for an AMD 1075T build and overclocking?

I'm definately going with a pair of 6870s in crossfire now, that is final but looking at the i7s.... im trying to work out what in real world terms I will achieve at the resolution I want to game at.

Quite a big price difference between the two CPUs.... £100 then the ram will likely cost more.

Same as last time: The i7 is faster in most things, marginally. If you want that tiny tiny little bit more of performance, you are going to pay for it.
