its all about the right click however, especially in the aztec city. hold it down for more power

The demo suite has a fluid simulator in it, as well as fog, and its really good (realistic) and runs really well too. Mind you its just blank textures... but they still work really well.

Wow that is REALLY impressive! That cloth physics demo is amazing.
Though, it is worth noting that my CPU usage was at 100% on most of those demos. This isnt really an accurate way to judge performance, but with the other calculations that need to be going on in a game, things could slow down consideribly when the physics is already using 100% of the CPU.

Fire up plain old doom3 and start playing, then bring down the console and type: bind g "toggle g_dragentity"

Then press g, click on a monster or physics object and throw it about.

pbmax (on http://www.doom3world.org/phpbb2/index.php) released version 1 of his gravitygun mod for Doom3 before HL2 was released and before the Doom3 SDK was out.
