I'm fairly familiar with setting up and managing raid, except one aspect. I have been using my SATA drives separately w/o raid, and now I want to combine them as raid 1. The question is that since my SATA 0 is now setup with x64, plus a couple of other non-os partitions, when I creat the raid, will the drive added also have these partions as well? I know that I could partition the array after it's creation, but what about before?

You're going to lose everything when you setup the array. Ghost the Windows drive and then add it back to the RAID.

Thanks. I was thinking that since you could replace a drive in an array, without losing anything, that it would be the same when starting the array with a drive already running. But, that's not a problem, because I already have a drive image ready.
