Most of the others I would have said have been said, so I'm definitely showing my age with these two:

Autoduel
Ultima

I'm gonna go with Crusader (No Remorse, No Regret). They could make that into a nice fps or 3rd person shooter.

That's a good one too... it seems to me, anything made by Origin should be brought back

Space Quest

Rainbow Six (original gameplay + coop)

Xwing vs Tie Fighter / Freespace

Duke Nukem 3D (why can't some just remake the original with a modern engine? What's so fraking hard about that?)

Edit: Not old enough but Phantom Dust....I loved that game.

Shadowrun (a single player RPG... not an MMO or first person shooter)
Carmageddon
Metroid (the side scrolling kind)
Phantasy Star (a sequel to the Genesis game... not an MMO)
Outcast
Call of Cthulhu (not that old but still needs a revival)
Indiana Jones (the adventure games)

Yeah, on top of incredibly well balanced game play, the game had memorable characters, good cut scenes, a great story, and actually pretty decent dialog for a JRPG.

Great music, sound, graphics... fantastic game.
