yeah it's a toss up for me between deadspace and GOW3.

In deadspace, it's more of an "eww.... gross" type of gore and in GOW3, it's just over the top spectacular "HOLY HELL!!! YESS!!!" type gore.

IMO, the GOW3 gore is executed flawlessly in that it's done just right.. there's not too much over the top unrealistic blood.

I'd have to say God of War 3 too. Both for gore and plain violence. Kratos is not a nice guy. One scene with a princess is particularly violent even though you don't actually see anything.
