GTS 250 HDMI SPDIF Audio Channels

I have a GTS250 and I'm thinking of buying an SPDIF cable to hook it up to my hdtv. I have a surround sound system and a pretty good receiver that can decode all the signals. If I were to carry my audio through HDMI how many channels of audio can I get from it? Because I don't want to buy the cable and only get stereo.
